One Pot Gnocchi Chicken Pot Pie (Lower Carb Version Included!)

1 Tbsp butter

Package of gnocchi (17 oz) or Trader Joe’s cauliflower gnocchi for lower carb option

3/4 bag of frozen peas

3 lg carrots chopped up or about 1 cup frozen carrots

1 small onion

1Tbsp / 2 cloves garlic

1 tsp poultry seasoning

2 Tbsp flour

2.5 cups chicken broth

1 cup milk of choice (I used almond milk)

Rotisserie chicken (or could use prepped baked or boiled chicken) or 2 cups chicken

Salt/pepper to taste

Instructions:

1. Melt butter in a large pot and then add the frozen peas, carrots, and onion (really you can use any veggies you have on hand). If you are using the Trader Joe’s cauliflower gnocchi, add this in as well. Cook 6-7 minutes until vegetables are tender.

2. Add garlic and poultry seasoning and stir 1-2 minutes.

3. Sprinkle flour over vegetables and stir.

4. Add the broth then the milk, turn up the heat to bring to a bubble, and then add the gnocchi (if using regular gnocchi). Turn down to medium, cook & stir for 5-6 minutes until gnocchi is tender.

5. Stir in the chicken.
