Ground Turkey Mini Bell Pepper “Nachos”

Ingredients
1 lb ground turkey
1/2 onion, chopped
1/2 packet taco seasoning
1 bag mini bell peppers
Shredded mozzarella cheese
Salsa
Optional: guac/avocado, rice
Instructions:
Preheat oven to 400 degrees Fahrenheit.
While waiting for the oven to heat up, cook ground turkey and onion in a skillet on the stovetop on medium heat. Add taco seasoning.
Cut the tops off of the mini peppers, scoop out the seeds, and then cut in half lengthwise.
Spread peppers out evenly on a sheet pan, top with ground turkey mixture and mozzarella cheese.
Cook in the oven for 18 minutes or until peppers are soft & cheese is melted.
Top with salsa & enjoy!
Optional: Add guac or avocado, serve over rice.
