3 Easy “Dump & Go” Crock Pot Recipes

The crockpot is such a great place to start to add some go-to, super simple options to your weekly meals as the weather gets cooler.

Here are three easy and delicious “dump and go” recipes to get you started!


Zesty Ranch Chicken & Potatoes

Ingredients:

3 large chicken breasts

1 packet of Hidden Valley Ranch seasoning

32 oz chicken broth (or could sub bone broth)

16 oz bag baby carrots

2 lbs baby red or gold potatoes

Instructions:

1. Rub ranch seasoning on each of the chicken breasts and place them in the bottom of the crockpot.

2. On top of the chicken, add the baby potatoes and the bag of carrots.

3. Add the container of chicken broth and the remainder of the ranch seasoning packet. Stir the seasoning into the liquid.

4. Cook on high for 3-4 hours or low for 6-8 hours.


Crockpot Salsa Chicken

Ingredients:

3-4 large chicken breasts

1 taco seasoning packet

1 container of your favorite salsa

Optional: shredded Mexican cheese, cilantro.


Instructions:

Rub chicken breasts with taco seasoning and add the chicken breasts to the bottom of the crockpot.

Top with your jar of salsa.

Cook on high for 3-4 hours or low for 6-8 hours.

Optional: top with Mexican cheese and cilantro.

Note: This one is great because it is so versatile! Use it in tacos, taco salads, quesadillas, or eat it with peppers/onions and rice, etc.



The Simplest Crock Pot Chili

Ingredients:

2 small sweet onions

1 large red or green bell pepper

3 cans beans (I used a mix of black beans, chickpeas, and kidney beans)

28 oz crushed tomatoes

3 cups chicken broth

2 Tbsp chili powder

2 tsp ground cumin

2 sweet potatoes

(optional to use 1 can of beans + add 1 lb cooked ground turkey)

Instructions:

Chop up the onions, bell peppers and sweet potatoes.

Drain and rinse all of the beans.

Add all ingredients to the crock pot. Stir & leave in the crock pot for 3-4 hours on high or 6-8 hours on low.
